That is a tortilla española with spinach and tuna on the right. Bonito (tuna) y patas stew in the middle and Ensaladilla Rusa (Russian Salad) - mayonnaise, eggs, peppers, potatoes, pees, and carrots on the left. In the little tupperware above is Crema de Puerros or leek soup.
Those croquettas are made by crushing the heads of all the shrimp (the body is used for salads and other dishes) and mixing the "shrimp juice" with bechamel. Homemade and SO good!
